Origine de Charlevoix
From top-quality milk sourced from local herds to the savoir-faire of its artisan cheesemakers, Laiterie Charlevoix are renowned for their finesse. The seven Labbé brothers – the grand-children of the dairy’s founding fathers ‒ now run the business which, aside from its traditional Cheddar, also produces several other fine cheeses.
L’Origine de Charlevoix is special because it features milk from La Vache Canadienne, a heritage breed of cows originally found in the hilly terrain of the Charlevoix region. French settlers founded many dairies in this area and although most of those original dairies are no longer in production, cheesemakers were very fond of replicating small washed rind cheeses they knew and adored from their homeland in France. L’Origine is made by Laiterie Charlevoix to honour these traditions in cheesemaking!
This soft ripened Reblochon-style of cheese is aged for 20-25 days and has an orange-coloured rind and a runny, cream-coloured paste. With a sharp and fruity aroma, its taste is pungent with rich hazelnut notes and a hint of salt.
Best served at room temperature with a crusty baguette and a glass of Beaujolais wine. L’Origine can also be enjoyed baked in a small ceramic dish with maple syrup for a sublime winter-time treat.
