Adoray
Wrapped lovingly in spruce bark, this soft pasteurized cow's milk cheese is from Fromagerie Montebello in Quebec. Ripened for 21 days, Adoray has a supple ivory paste with woodsy notes of salted butter and hay and is a worthy Canadian interpretation of the extremely rare and highly seasonal Vacherin Mont d’Or.
Montebello's artisan cheesemaker Alain Boyer created this cheese as a tribute to his father and grandfather and it is their photo that adorns the front. To enjoy, gently slice off the top and scoop onto a fresh baguette with a dollop of your favourite local honey for an incredible, savoury-sweet delight.
