Via Mala Bio
Named in honour of the famous gorge, this alpine-style comes to us from the Nufenen Dairy Co-operative located high in the mountains of Switzerland.
It all starts with organic milk, delivered daily and collected from local Brown Swiss cows. These beautiful animals spend the summer grazing at over sixteen hundred metres elevation, where they enjoy a special diet of flowers and mountain herbs. The resulting milk is rich in omega-3 acids and alpine flavours. Cheeses are then matured for nine to twelve months, developing a terracotta rind with a compact yet fudgy paste.
Lovers of Gruyère and Chällerhocker will appreciate this milder version of the alpine greats with its approachable and creamy profile. Earthy and sweet with a caramel-pecan finish, Via Mala is perfect for all your fondue & gratin needs. It's also an excellent table cheese, paired with dried figs and a rich, robust red.
