In the brand new modern urban facility in the leafy North End neighborhood of Dartmouth, unique and wonderful Blue cheeses are in different phases of production, ripening and aging. Cheesemaker and owner, Lyndell Findley is an incredible woman who is originally from South Africa, and worked for many years with the UN. Once retired, Lyndell decided it was time to learn how to make blue cheese, so she apprenticed in France and learned to make Fourme d’Ambert. Once settled into life in Canada, Lyndell opened her dairy and starting making delicious, easy to fall in love with blue cheeses.
Heavily inspired by Gorgonzola, Urban Blue is buttery in texture and wonderfully mushroomy with a gentle flavour and delicious aroma. Aged for eight weeks, it carries just a hint of that pungency that makes blue cheese so delightful. The result is a spreadable double cream blue cheese that is sure to please every palate.
