Ubriaco al Prosecco DOC
Originating in the Veneto region of Italy, Ubriaco is known as the drunken cheese and refers to the application of grape must or wine while aging. Particularly popular in the north, this practice both protects and flavours the wheel, resulting in a delicious and aromatic cheese that will add a burst of flavour to your cheeseboard.
This unique Ubriaco comes to us from Latteria Moro of Oderzo, Italy. Founded in 1930, Latteria Moro specializes in the authentic, handcrafted refinement of cheese using traditional techniques. To start with, firm wheels made from pasteurized cow's milk are immersed for several months in DOC Prosecco. A famous Venetian sparkling wine, Prosecco is appreciated for the aromatic nature of its grapes which offer up hints of white flowers, green apple and peach. This Ubriaco is the only cheese authorized by the Union of Prosecco to use its designation, making it a truly special delight.
Developing a dusky brown rind, the paste of Ubriaco al Prosecco DOC is compact and uniform with few eyes. Richly aromatic, a creamy texture offers up elegant notes of green apple and ripe fruit that mellow out into a tropical sweetness.
