Tomme de Yenne is a rare and lesser known Tomme produced by the Coopérative Laitière de Yenne Porte de Savoie. Milk is collected daily from producers and transformed by master cheesemakers. It is then matured for six weeks in traditional cellars - developing a rustic grey rind that is a sign of quality. It offers a soft and fragrant aroma that is earthy, mushroomy, and herbaceous. The longer it matures the more the flavours are pronounced. The flavour has length and develops with each bite, offering all the special characteristics of milk from the haute savoie; slightly floral, sweet, and nutty.
