Coming to us from Lenberg Farms right here in Ontario, Tania is a firm, Toscano-style sheeps cheese that has received international acclaim.
Talented cheesemaker Pieter van Oudenaren and his team oversee the production of each wheel, which is made using quality ewes milk from local farms. Shaped into its round form and pressed for twenty-four hours, Tania is then aged in special temperature and humidity controlled maturation rooms. Regularly washed and turned, moisture is slowly released while the pine shelving it sits on imparts important flavours.
With a textured rind, each wedge of Tania has a firm and crumbly paste that darkens with age thanks to presence of carotene in the milk. Mellow at first, Tania soon blossoms into a complex, nutty delight with flavours of butterscotch on the finish that render it absolutely irresistible to nibbling.
A standout on your cheeseboard, Tania took home Super Gold at the 2013 World Cheese Awards and it's easy to see why. This special sheep cheese is a wonderful representation of the local Ontario terroir and a new modern favourite here at the shop.
