St Andrews Farmhouse Cheddar
A single-herd, farm-to-table Scottish cheddar. Aged for nine to twelve months, this raw-milk cheese is butter-yellow with a creamy texture and powerful flavour.
For over 50 years the Stewart family have been farming in Fife. Dairy production has always central to the business, and Jane Stewart and her husband Robert proudly control every step of cheese-making process. Their herd of Holstein Friesian cows graze on fields overlooking the Firth of Forth, where the heavy clay soil encourages lush green grass to grow. These elements of land and sea also lend unique characteristics to St Andrew's cheeses – the complexities of flavour and aroma owe much to the diet of their cows and the balmy east coast climate in which they thrive.
