Irene and Jan Dirk van de Voort produce this traditional-style gouda on their organic farm in Lunteren which has been in the family for centuries. With more than a hundred acres of clover-rich meadows and tree lined riverbanks, their herd of ninety horned Jersey ladies enjoy a tasty, healthy diet from unadulterated soil that is rich in nutrients.
Jersey Cows are an unusual choice for The Netherlands as the country has many of its own heritage breeds, but they are well-suited to organic farming. Intelligent and undemanding, the breed is highly efficient in its conversion of fodder to rich milk which in turn produces an excellent, nutritious cheese.
Made with raw milk and brined in a salt bath for less than forty-eight hours, each wheel of Remeker cheese is then aged on wooden shelves in the family's custom-built ripening cellars. Turned occasionally, each wheel is rubbed with the farm's own homemade ghee (clarified butter) to protect it from drying out. This also means the rind is fully edible!
Our Remeker is aged for sixteen months, developing a firm, textured rind that bears the cheese's name in handsome natural embossing. Inside, a striking golden paste offers up nutty and herbaceous aromas. In testament to the farm's healthy terroir, the first bite intensely grassy, finishing with hints of burnt caramel and dried fruit that recollect the best alpine cheeses.
The van de Voort family have taken home several accolades for Remeker including World's Best Jersey Cheese in 2014, and it is easy to see why. This is a truly unique and sustainable take on traditional farmhouse gouda.
