Raclette St-Niklaus

Raclette takes its name from the French verb racler, meaning to scrape. Traditionally, Alpine shepherds would lunch upon boiled potatoes and cornichons, covered with this delicious cheese which they would warm in front of the fire.

This classic Swiss raclette is produced in the Canton of Valais and is aged for three to five months. Made with raw cows milk, the dusky, sticky rind is characteristically pungent while the firm golden paste is dotted with small eyes. The use of raw milk ensures this raclette is deliciously lactic and tangy, with an earthy, caramelized onion finish that is just begging to be melted & enjoyed.
