Raclette Savoyarde

Raclette Savoyarde, along with Fondue, is a typical Savoie dish of the French Alps. Raclette takes its name from the French verb 'racler,' meaning ''to scrape.'' Traditionally, Alpine cheesemakers would lunch upon boiled potatoes and cornichons, covered with melted cheese that they scraped from a nearby fire-heated boulder. Since it is a very simple dish, it is quick to prepare and depends almost entirely on the quality of the ingredients chosen.

This 4-month aged Raclette is made with milk collected from cows of the rhone-alp region who feast on grassy mountain pasture, which is evident in the smooth and mild, buttery taste of this cheese. During the aging process, the wheels are washed to develop an edible rose-hued rind, that offers an additional meaty taste and aroma. Raclette can also be enjoyed on a cheese board, or as the main melter in an extra oozy grilled cheese sandwich.
