Raclette de Savoie IGP

Raclette Savoyarde is a classic cheese from the Rhône-Alpes region and takes its name from the French verb racler, meaning to scrape. Traditionally, Alpine shepherds would lunch upon boiled potatoes and cornichons, covered with this delicious cheese which they would warm in front of the fire.

This four-month aged Raclette comes to us from Fruitières Chabert. Emerging in the region of Savoy more than a hundred years ago, dairy cooperatives allowed farmers to gather the ‘fruit’ of their work in one place for further refinement.  The milk collected by each Chabert cheese dairy comes from three breeds of rustic cows:  Abondance, Tarine and Montbéliarde. Free to roam and well-adjusted to the rugged terrain, the cows feed on fresh grass and forage, producing a milk rich in flavours of the alpine flora.

Each five kilo wheel arrives to us with a sticky washed rind and supple straw-coloured paste. Strongest on the rind, meaty and savoury notes dominate, becoming even more pronounced and delicious when warm. In addition to fondue, you can enjoy Raclette on your cheese board, or as the main melter in an extra-oozy grilled cheese sandwich.
