Pierre de Sel Bio
This special cheese comes to us all the way from Austria. Semi-firm with small eyes dotting its golden paste, the Pierre de Sel owes its unique flavour and aroma to organic hay milk, or heumilch. This means it is made from the milk of cows who enjoy a traditional diet of biodiverse pastures in summer, and tasty hay during the winter months, with silage being strictly prohibited. The wheels are then rubbed with a mixture of Carpathian salt and mountain herbs and aged for over four months in natural stone cellars.
The result is a raw-milk alpine cheese of exceptional provenance and flavour. Aromatic and herbaceous, Pierre de Sel is deliciously tangy with a striking blue-grey rind.
