Magie de Madawaska
Founded in 1999 by husband and wife team Mario Quirion and Ginette Bégin, Fromagerie Le Détour is located in the Témiscouata region of Quebec. This small dairy has won big accolades for its range of artisan cheeses including shop favourite, Grey Owl. Magie de Madawska is another standout offering.
Like its famous French cousins Époisses and Munster, Magie de Madawaska is a washed-rind cheese. Produced using whole milk from local Jersey cows, it is ripened for one month, during which each wheel is washed every two days with brine and other secret ingredients. Developing a sticky, golden orange hue, the rind is fully edible and sometimes flecked with natural white mould spots.
Firm and chalky when young, Magie de Madawska grows supple and runny with age. Offering a woodsy and lactic aroma that gives way to lingering flavours of toasted hazelnuts, sour cream and melted butter, at peak ripeness this special cheese is just begging to be dunked into with a fresh and crispy baguette.
