Lindenhoff Truffle Gouda
Lindenhoff is a small family producer in the Netherlands specializing in authentic farm-to-table products. This farmstead truffle gouda is made exclusively for them by talented cheesemakers Hugo and Marije Van der Poel.
Hugo and Marije's farm is located on a beautiful island on the border of the Kagerplassen - a lake system in South Holland. Hugo is the third generation of the Van der Poel family to make cheese there. Just as his grandparents established, many of the steps are still done by hand in the traditional way. The couple's herd of one hundred and fifty Holsteins enjoy spacious stables and plenty of lush island grass, imparting each wheel with the unique flavours of the water-rich Groene Hart (Green Heart) terroir.
With an inedible rind and smooth texture, this young farmstead gouda is semi-firm and dotted with large pieces of fragrant Italian summer truffle. The raw milk lends a strong, herbaceous and farmy tang to the cheese that is balanced out by a distinctly creamy truffle finish.
