Le Paillasson de l’Isle d’Orléans
Les Fromages de l’Île d’Orléans is an award-winning maker of artisanal historic cheeses that pay homage to the colonial period of New France. Their famous Paillasson keeps alive the recipe of one of the first cheeses ever produced in North America, made at home by Île d’Orléans families as early as 1635.
Named after the reed mat on which it was traditionally placed for drying on top of the stove, Le Paillasson is similar to Halloumi and should be fried in a pan for about two minutes on each side, until the heat reaches the centre and the outsides turn golden-brown. Salty, lactic, and absolutely delicious, this is summer cheese at its best.
