Fromagerie Au Gré des Champs of Quebec specializes in raw milk farmhouse cheeses made from a single herd of happy Brown Swiss cows.
Two decades ago, owners Suzanne and Daniel built a cheese dairy on their small farm in Saint-Jean-sur-Richelieu to both promote their milk and safeguard their family's heritage. Their Brown Swiss herd is a rustic breed that produces a milk rich in proteins, making it excellent for cheese processing. In summer, their cows graze on a luxuriant mixture of plants and in winter they enjoy dry hay and grain produced right on the farm.
With a strong emphasis on healthy and happy animals, the couple have proudly obtained organic certification, ensuring they do not use pesticides, chemical fertilizers or GMOS and all of their cheeses are made using raw milk.
New to our wall, their D'Iberville cheese is a semi-firm wheel with a distinct washed rind that is pink and slightly bloomy. Inside, the paste is a pale yellow and dotted with small eyes. Refined for six to eight weeks, D'Iberville features mild rustic aromas and herbal notes with a refreshingly lactic and nutty finish.
