Lamb Chopper is a creamy, complex sheep gouda from Cyprus Grove Cheeses.
Located in California's Pacific Northwest, Cyprus Grove was founded by Mary Keehn. A self-proclaimed hippie and single mother of four, Keehn was part of the initial wave of cheesemakers in the eighties and nineties that helped turn the American artisanal cheese scene into the diverse, exciting world it is today.
Launched in 2003, Lamb Chopper debuted at a time when there were few aged goat and sheep cheeses being produced in the US. The milk supply was limited - as was space for proper aging. So when Keehn was approached by a Dutch cheesemaker at a food show with the same ethos regarding happy animals and quality cheese, this unique collaborative Sheep Gouda was born.
Aged for at least three months, the ivory coloured paste of Lamb Chopper is smooth, creamy and nutty with a subtle caramel sweetness on the finish. A great firm option for your boards, it's also an excellent melter.
