La Moutonniere Ricotta
Fromagerie La Moutonnière is a pioneer in Québec when it comes to cheese made with ewes milk. With a strong focus on the welfare of their animals, their two-hundred ewes have free range access to naturally seeded pastures, free-flowing spring water, and are never fed with silage.
Their artisanal cheeses are made with milk from the farm’s own herds as well as neighbouring sheep farms that share these values. However, each cheese is always made with the yield from a single herd in order to ensure consistency of taste.
The result is a locally made ricotta that is superior in taste and quality. Ricotta is a traditional Italian fresh cheese made with whey that has a smooth creamy texture and sweet flavour. La Moutonnière's farmstead version is softer than those typically made from cow or goat milk and just as delicious!
