Founded in 2008, Fromagerie Missiska is known for its incredible and delicious Jersey milk products.
Owner and cheesemaker Caroline Pelletier has raised Jersey cattle for more than twenty years. Even when away studying, she would come back every weekend to take care of her cows. The result is a truly special herd that has been carefully formed from generation to generation.
Often called the champagne of milk, Jersey milk is rich in fat, proteins and nutrients, making it an excellent choice for cheesemaking. A robust animal, they adapt well to the varied Québec climate and have a smaller ecological footprint than other breeds. There is another advantage to Missiska's herds - Caroline selects her breeding livestock with the aim of having a maximum number of animals carrying the A2A2 gene, which fosters production of a milk rich in type-A2 ß-casein, a protein with numerous advantages. A milk richer in type-A2 ß-casein can apparently cause fewer adverse effects in people who have a hard time with milk proteins.
The result is a rich and creamy milk that makes an even more exceptional cheese. Missiska's flagship offering is Le Jersey Royal, inspired by such French classics as Saint-André, Chaource and Délice de Bourgogne. Soft-ripened and aged for up to ten days, Le Jersey Royal has decadent flavours of butter and cream and becomes even more supple and fudgy with age.
