This salty Mediterranean grilling cheese originated in Cyprus centuries ago and has since enjoyed popularity on the world stage.
Made from a variety of milks, Halloumi is produced both locally and abroad. This version comes comes to us from Cyprus itself and is made with pasteurized cow's milk. Similar in texture to mozzarella, its unique rigidity when heated is achieved via a second heating during the production process followed by a short pressing. It is then dipped in hot whey, destroying the starter bacteria and preventing further development of acid. The creation of a strong, rigid protein network ensures Halloumi stands up to high temps, developing a crispy, golden crust while the inside grows irresistibly soft, salty and tangy.
