Hacienda Organic Aged Sheeps Cheese
The Hacienda Zorita organic farm is located on more than three hundred hectares of protected pastures, forests and fields in northwestern Spain. With a commitment to the International Slow Food movement, the farm helps to preserve endangered native species with their unique produce and farming methods.
Free-grazing Churra ewes provide the flavourful raw milk that goes into each wheel of this award-winning cheese, which is pressed and aged for up to twelve months. Encased by an inedible rind, the paste is creamy and lactic with flavours of sweet hay and a balanced salt - reminiscent of Manchego yet with its own distinct personality.
