A staple here at the shop, this ashy soft ripened goat cheese is made with whole milk from a single herd of Saanen, a Swiss brand of goat breed. The cheese pays tribute to the revolutionary conservationist Archibald Belaney, fondly known as Grey Owl for his fascination with Native American culture.
The ash endows the cheese with a wrinkly, dark, slate-coloured edible rind. As Grey Owl ripens it offers a pleasant pungent aroma. The interior paste is dense, crumbly and creamy, softening at the edge of the rind. As it melts in your mouth, the smooth and silky texture of the cheese offers pleasing tart and lemony flavours balanced by the mellowing action of the ash.
