In the early 1950s, Maria and Sergio Gennari purchased a small cheese dairy and began producing Parmigiano Reggiano. Their humble setup in Collecchio, near Parma, only allowed them to make three wheels of Parmesan a day. Two generations of Gennari children have since taken on the cheesemaking mantle, but the family's philosophy remains - quality above everything.
Gennari parm has gained a reputation as the Ferrari of Parmigiano and it's easy to see why. With only a few rigorously selected wheels allowed to reach this age, the compact and crumbly paste reveals a cheese that is fruity, bold and full of personality. Perfect for enjoying with an after-dinner spirit like a twelve-year Tawny Port.
