Fou du Roy
This semi-firm washed-rind cheese is an organic farmhouse cheese made with Holstein milk from the family farm. Les Fromagiers de la Table Ronde likes to name its products with names reminiscent of medieval times. The name Le Fou du Roy is a reference to the court jester. The pink-orange rind contrasts against the ivory, buttermilk interior and offers a melt-in-your-mouth texture. The aromas are slightly vegetal and pungent. The flavours are buttery, nutty and lactic with a slightly granular and bitter note from the rind.
Fou du Roy is very much like traditional trappist style cheeses and a pleasure to have on any cheese board!
