Fior di Pascolo
Fior di Pascolo is an artisan cheese produced by Caseificio Dancelli. Fresh milk from Austrian pastures is collected each day and transported to Lombardy. The name comes from the words fiore and pascolo which translate as pasture flower.
Aged for approximately one month, Fior is sweet and delicate with an inedible rind. During the ripening process, holes the sizes of a cherry or even walnuts are formed in the cheese, making it a visually striking and delicious addition to your cheese board.
