Corsu Vecchiu is a firm sheep's milk tomme from the Société Fromagère Corse. Located in Upper Corsica, this fromagerie strives to preserve and enhance the traditions and richness of the land that they have nicknamed the Shepherds Island. They maintain a deep relationship with the eighty-five local shepherds with whom they work, and Corsican sheep are unanimously recognized for their hardiness and the rich milk they provide, which is collected seasonally.
Corsu Vecchiu is refined for more than five months. Its natural grey-white rind is ridged, giving it a rustic look. A dark, caramel coloured outer layer gives way to a creamy white paste. With a subtle, almost musty aroma, Corsu has a nutty, milky flavour, with herbaceous notes and a touch of briney Mediterranean air emerging.
Winning the Gold Medal at the Concours Général Agricole de Paris in 2017, the sweet nuttiness of Corsu Vecchiu pairs perfectly with fresh fruit such figs as grapes, or grated over fresh pasta and baked gratins.
