Comte AOP Aged 24 Months

Comté has been made in small village-based cooperative dairies (or Fruitière) for over eight centuries. This process has created a sense of solidarity and pride and has preserved the traditions and the small-scale production techniques that have helped ensure Comté continues to be one of France's most popular and protected cheeses.

A well-aged Comté is produced in the spring of the previous year and will display a sumptuous golden-yellow straw colour. This wheel is refined by the master affineurs at Fromagerie Badoz and aged for twenty-four months in the Granges-Maillot tunnel, a former railway passage is located in the heart of the Haut-Doubs forests.

With a crumbly rind and sumptuous paste, flavours are reflective of milk that is typical to the Jura - sweet and floral, with distinct flavours of browned butter and nuts. You will also notice the fudgy paste is flecked with tyrosine crystals, sometimes referred to as cheese diamonds! These crystals are formed from strands of amino acids during the aging process, and add a toothsome quality to an already addictive, delicious cheese.
