Colliers Welsh Cheddar
First produced using 100% Welsh milk from the beautiful mountains of Denbighshire, Colliers is an aged cheddar inspired by the country's industrial heritage.
Coal mining features proudly and prominently in Welsh history and cheese was an ideal food for the colliers working underground. Founder Chris Swire was born in South Wales and has memories of his grandmother making lunches packed in a tommy box for his grandfather to take with him. A source of nutrition, cheese not only kept well but provided a burst of flavour amidst the pervasive coal dust.
Aged for up to twenty months, Colliers is has a crumbly mouthfeel with plenty of those delicious tyrosine crystals. Gently tangy, with a long finish that carries a hint of sweetness, Colliers is the perfect nibbling cheddar for your cheese board. It would also make for a fantastic grilled cheese with a dollop of sweet chili or tomato jam on the side for dunking!
