Ciel de Charleviox

The distinctive speckled blue veining of the cheese was inspiration for naming the cheese after the starry night sky of the Charlevoix region.  Whole milk from a single herd of Holsteins is used to produce this creamy, blue-veined semi-firm that is aged for a minimum of 60 days. The rustic, natural rind imparts a delicate woodsy aroma, while the flavours are mild, slightly fungal, and distinctively ‘blue’. This cheese offers a perfect balance of salt, sweet and earthy creaminess on the palate.
