Chimay Grand Cru
One of our cheesemonger's favourites, Chimay Grand Cru is an authentic Trappist cheese. It is produced near Scourmont Abbey, with the community of Trappist monks being responsible for quality control during the production process using fresh milk from the region.
During the four-week traditional maturation period, this cheese is washed with Chimay beer and undergoes a wonderful transformation. The beer imparts a delicate yeasty aroma and taste and may remind your palate of fresh-baked bread. With a distinctive, Oka-like rind, the paste inside is supple and buttery, with pungent notes of leek and onion.
