Cheval Noir de l'Isle
Cradled by the St. Lawrence River some seventy-five kilometres from Quebec City is Canada's largest artisanal cheese cooperative, Fromagerie Île-aux-Grues. Internationally renowned, the cooperative makes cheese exclusively from farms on the island, taking advantage of its unique micro climate to produce a superior product.
This striking cheese is one such offering. Inspired by the legend of a black horse seen disappearing into the cold St. Lawrence waters, its bloomy rind is covered in beautiful streaks of vegetable ash.
With a smooth, pale golden paste, this semi-firm has tart, herbaceous aromas with rich flavours of sour cream, butter and hazelnuts.
