Le Cendre de Grands-Jardins

Established in 1948, this fourth-generation family business began as a dairy farm selling its products in the Charlevoix region and on Québec’s North Shore. The seven Labbé brothers, grand-children of the dairy’s founding fathers, now run the business which aside from its traditional Cheddars, also produce and distribute fine cheese Canada-wide.
One such offering is this delicious semi-firm that is reminiscent of AOP Morbier. Named for the nearby Grands-Jardins park which was marked by forest fire nearly twenty years ago, the supple cream-coloured paste of Le Cendré is divided by a distinctive layer of vegetable ash and enveloped by a pillowy, orangish rind. Made with pasteurized cow's milk, this cheese is aged for forty-five days, developing pleasant notes of grassy meadows & fruit with a subtle farmhouse tang.
