Brebirousse

Produced in the Rhône-Alpes region of France, Brebirousse is a silky, unctuous cheese that literally translates as red sheep. Aged for thirty days, this cheese arrives at the shop in a handsome square shape with a distinctive orange rind that immediately begins to ooze once cut into. When young, Brebirousse is rich and sweet, but as it matures it becomes earthier and more savoury as the washed rind takes on a duskier hue.

We recommend pairing Brebirousse with a crusty baguette or a light red wine like Beaujolais.
