Cheesemaker Brigitte of Les Fromages du Verger has a passion for making exceptional artisan cheeses from her flock of East Friesian and Lancaune sheep. Fresh milk travels just fifty feet from the milking parlour to the cheesemaking room on this special farm located near Oka, Quebec.
Featuring a wrinkly rind that smells of honey and fresh-baked bread, the inside of Brebiole has a mousse-like consistency, growing more unctuous with age. Notes of fresh lactic cream, cultured butter, and mushroom prevail.
