The production of a Toscano Pecorino is an artform dating back nearly two thousand years. Made from sweet, fragrant ewe's milk, this young truffled version is produced by agricultural co-operative Il Forteto. Founded in 1977, today the co-op is comprised of more than one hundred farming families from all over the region and is one of the Toscano Pecorino Consortium's largest producers.
With tiny flakes of shaved truffle scattered throughout its semi-firm paste, each wheel of Boschetto al Tartuo weighs in at just over a pound. Aged for just two weeks, the nearly caramelized ewes milk produces sweet and delicate notes that balance perfectly against the strong earthiness of truffle.
