Boerenkaas translates as farmer's cheese and that's an apt description for this specific variety of quality artisan Gouda produced only on smaller farms in the Netherlands. To qualify as Boerenkaas, the cheese must be handmade from raw milk according to traditional and controlled methods.
This wheel comes to us from the Schrama family farm. Located in Holland's Green Heart, a region famous for its vast, luscious pastures, Ellen and Paul Schrama are third-generation farmers. Ten months out of the year, they make gouda from the raw milk of their cows who are free to graze and shelter in the open barn as needed.
Aged for a minimum of eighteen months, this Boerenkaas has an inedible orange rind with a deep golden paste that is both creamy & crumbly. Wonderfully complex, intense flavours of toasted pecans give way to a touch of caramel sweetness.
A fantastic firm option on your next board, Boerenkaas also shines as a cooking cheese - try it in grilled cheese or grated over hearty, seasonal soups.
