Blanc Bleu du Rizet fermier
The Blanc Bleu is a raw, goats milk cheese produced by the Rizet family in the Montot region of France. Whole milk is collected every morning and evening and combined to make a cheese that is ladled, salted and turned by hand to create a true pleasure for the sense. The cheese is aged until there is a soft downy cover of white and blue bloom. As the cheese ages, it deepens in flavour offering a slightly lactic, citrus and herbaceous flavour. The texture is dense, rich and smooth allowing for a lingering experience.
A little piece of this elegant cheese offers surprising length, which is answered perfectly by a glass of Sancerre.
