Wildwood

Located in St. Mary's, Ontario, Stonetown Artisan cheese was founded in 2015 by Hans and Jolanda Weber who immigrated to Ontario in the mid-nineties. Together with master cheesemaker Ramon Eberle, Stonetown produces more than half a dozen award-winning farmstead cheeses that are reminiscent of the alpine greats.

All the milk used is unpasteurized and comes from the family's own herd of more than two hundred happy Holsteins. Named for the dam in St. Mary's, Wildwood is made in the style of an appenzeller, the classic swiss mountain cheese. Brine-washed and aged for eight to twelve months, your first experience with Wildwood will reveal a rustic brown rind and sweet aroma.

Inside, the golden paste is firm yet creamy, offering up complex, rich notes of toasted nuts with a slightly herbaceous and savoury finish and finely balanced salt. Perfect for lovers of Comté and Gruyère, Wildwood is great in sandwiches. It's also an excellent melter!
