Manchego AOC Aged 18 months
Spain's most famous cheese, Queso Manchego has been protected by designation of origin status since 1984. This regulatory classification system requires producers to use 100% Manchega sheep milk. Native to the region, Manchega ewes are a sturdy breed that traverse the rocky, arid plateau region of La Mancha.
This raw-milk Manchego is aged for eighteen months, developing an intense and upfront fruity tang followed by a pleasant gaminess. Its firm, drier texture is akin to Parmesan, providing a great chew and satisfying experience.
Excellent when grated over pasta or into sauces, pair this aged Manchego with a sweet fig delice. The higher acidity in this cheese pairs also pairs well with medium to full-bodied red wines that are berry and tannin-rich.
