Like all true farmstead producers, La Moutonnière do not standardize their cheese production, allowing seasonality to affect the composition of the milk. The result is a wide range of delicious cheeses - from fresh Ricotta and to aged pressed wheels - bursting with authentic flavours of the local Quebec terroir.
Aged for six to eight weeks, their Bercail falls into the semi-firm category and is an absolute must-try. With a peachy washed rind and supple, creamy texture, it features appetizing vegetal aromas followed by rich, lactic flavours that finish with a hint of hazelnut, peanut butter and salt.
