Cacio di Bosco
The production of Toscano Pecorino is an artform dating back nearly two thousand years. This sweet, fragrant ewe's milk cheese gained PDO status in 1996 and is produced exclusively from the milk of herds grazing on Tuscany's rolling pastures.
This aged truffled version is produced by agricultural co-operative Il Forteto and is a longstanding shop favourite. Founded in 1977, the co-op had very humble beginnings, initially formed by a group of young friends who had just forty sheep between them. Today the co-op is comprised of more than one hundred farming families from all over the region and is one of the Toscano Pecorino Consortium's largest producers. Despite its growth, however, Il Forteto remains committed to the highest quality standards while still upholding centuries of cheesemaking tradition.
With tiny flakes of fresh truffle scattered throughout its friable paste, every wedge of Cacio di Bosco is a luxurious experience. Aged for three months, the nearly caramelized ewes milk produces sweet and nutty flavours that balance perfectly against the strong aroma of truffle.
