Bleu des Basques

Produced in the heart of Basque country at the foot of the Pyrenees mountains, Bleu des Basques is an earthy, approachable blue cheese made with pasteurized ewes milk.

For over thirty years, the Onetik Cheese Co-operative has collected milk from local farmers to make authentic and traditional Basque cheeses. 
From the end of spring to mid-October, native Manech and Basco-béarnais sheep enjoy the high mountain terroir with its lush fodder of wildflowers and grass. 

Created in 2001, Bleu des Basques quickly went on to win gold at the Paris Agriculture Fair and put Onetik on the map. Aged for three months, wheels develop a textured natural rind thanks to the presence of edible mold in each ripening cellars. Inside, the cream-coloured paste is mild and springy, with a gentle earthiness and pleasant lactic tang.

The perfect artisanal starter blue, we recommend pairing your slice with a drizzle of honey, dried figs and a sweet Pyrenees red like Maury AOC.
