Simple to make but complicated to perfect, DOP Taleggio is highly dependent on both milk and geography, requiring the right amount of humidity to ensure the enzymes and molds properly work their way through the cheese. Our Taleggio is currently made with Water Buffalo's milk and aged for up to forty days. Repeatedly washed with brine, this gives the cheese its characteristic pungent smell and peachy-orange rind. Often covered in natural white and gray-green molds, this colourful mosaic ensures the cheeses looks every bit as delicious as it taste.
Despite the strong aroma, Taleggio offers quite a complex and pleasing palette of flavours. Ensure you enjoy it at room temperature to enjoy the full effect of its rich, meaty notes that finish with a subtle fruitiness. Its firm yet springy paste is dotted with small eyes and its silky smooth texture will begin to ooze when warm.
Endlessly versatile, you can spread Taleggio on a chunk of crusty bread for a truly savory and simple experience, or pair this cheese with dried fruits and nuts for a sweet after-dinner treat.
