Enshrined in purple wax, the award-winning Midnight Moon is a blushing, ivory-coloured goat gouda from Cyprus Grove Cheeses.
Located in California's Pacific Northwest, Cyprus Grove was founded by Mary Keehn. A self-proclaimed hippie and single mother of four, Keehn was part of the initial wave of cheesemakers in the eighties and nineties that helped turn the American artisanal goat cheese scene into the diverse, exciting world it is today.
Launched in the nineties, Midnight Moon debuted at a time when there were few aged goat cheeses being produced in the US. The milk supply was limited - as was space for proper aging. So when Keehn was approached by a Dutch cheesemaker at a food show with the same ethos regarding happy animals and quality cheese, this unique Goat Gouda was born.
Aged for at least six months, the ivory coloured paste of Midnight Moon is smooth and creamy with a slightly granular mouthfeel thanks to the prescence of those delicious protein crystals. Upfront flavours of butterscotch and browned butter prevail, finishing with a gentle sweetness sure to win over even the most goat cheese averse.
