Cremeux du Jura
This soft bloomy cheese arrives at Jacobsons from the pastures of the Franche-Comté. It is known by cheesemakers as a fall and winter cheese as it is often too delicate for hot summer days.
The first experience with Crémeux du Jura is visual. A little band of Spruce bark hugs the cheese and helps to keep its form. Its aroma is of buttermilk, wood, and hay. The texture is soft and buttery without being too runny. Finally, the taste is mild and lingers with subtle hints of cultured butter, mustard, and a balanced sweet note, typical of milk from the Jura massif.
This cheese is best enjoyed with a small spoon!
