Located in Alymer, the Organic cooperative Healthy Organic Produce Enterprises (H.O.P.E.) represents an Amish group of more than thirty small-scale farms.
While they produce less yield than dairy cattle, water buffalo milk is considered liquid gold and is rich in both nutrients and flavour. The herd raised at the H.O.P.E. eco farm is grass-fed, and the milk collected is sent off-site to Gunn's Hill in Woodstock, Ontario where it is turned into this gouda-style cheese by Shep Ysselstein and his team.
Aged for six months, each wheel of Elgin Buffalo develops an inedible orange rind, while the firm ivory paste is rich and creamy with irresistible, complex flavours of browned butter.
