Queso de Valdeon
Another cheese rich in tradition, Queso de Valdeon has been awarded a status of Protected Geographical Indication (P.G.I.) to regulate production, processing and preparation of the cheese.
Its distinctively bold and tangy flavours are brought about by the unique maturing process in the cold, damp cellars of Leon cheesemakers and the special blend of milk. The texture is soft, granular, and crumbly. It has very dense blue veining and comes wrapped in sycamore leaves covering an inconsistent rind that varies in dark grey and brown shades, from the leaves and aging.
Valdeon is extremely strong, spicy, and tangy with a peppery finish that lingers on the palette!
