Hailing from Normandy, Mimolette is a hard cow's milk cheese initially inspired by Dutch Edam.
Infamously difficult to open, Mimolette has the deceiving appearance of a cratered cannonball dipped in black wax. Its paste is just as unique - electric-orange, firm and oh-so-smooth. Notes of caramel prevail, with a fudgy finish that is both salty and sweet.
This Mimolette is aged for twenty-four months, making it the perfect pairing for a sweet bourbon or strong beer.
