Coming to us from Lenberg Farms here in Ontario, Lindsay Bandaged Goat Cheddar is a rare and wonderful thing - a goat cheddar produced using the historic method of cloth-wrapping. Labour intensive, this method long ago fell out of favour with the advent of wax-coated cheese. However, when done right, this permeable barrier protects each wheel from excess moisture loss while still ensuring access to the air needed for proper maturation. The result is a delicious cheese with plenty of those sought-after crunchy tyrosine crystals.
With notes of cooked milk and and a sweet, caramel earthiness, Lindsay Bandaged Goat Cheddar is typically aged for at least twelve months and is the perfect cheese to elevate your winter soups this holiday season.
