Godminster Vintage Organic Cheddar Heart
With its distinctive burgundy rind and oh-so-crumbly golden paste, the award-winning Godminster Vintage Organic Cheddar is a staple here at the shop.
Produced in Somerset, England, the Godminster farm has had people living and working its land for over five hundred years. In 1993, Richard Hollingbery bought the property with the goal of creating a self-sustaining environment where nature could regenerate and flourish.
Certified organic in 1999, the farm boasts more than one thousand acres of orchards, ponds and forests. Somerset gets a lot of rain, and the resulting verdant pastures provide the perfect fodder for the farm's more than three hundred Friesian, Normande and Short Horn ladies who spend as much time grazing outside as possible.
Each truckle of Godminster is made using pasteurized cow's milk following a recipe for cheddar that is nearly a century old. Once enshrined in burgundy wax, each truckle is matured for up to twelve months, resulting in a rich and creamy cheddar that lingers beautifully on the palate.
Suitable for vegetarians, this cheese can be scooped out of the rind and pairs well on your cheeseboard with a fresh slice of apple.
